Frugal Eats - Sticky balls

At my house we like granola bars, but no so long ago we found a "hitchhiker" on one of the store bought ones and now I simply can bring myself to buy them. In my search for a replacement item I found several versions of this recipe and tweeked it to make it my own. You can easily sub out any of the dry ingredients for others, the only one I did NOT like was chia seeds added. Think of these as a healthier protein version of no-bake cookies. I call this recipe sticky balls, because they always leave a little on your fingers...and besides the name makes me giggle a bit, so why not.

1 C creamy peanut butter
2/3 C honey
2 tsp vanilla
2 C coconut
1 C raisins or crasins (can easily sub for any dried fruit)
2 C uncooked oatmeal (I used quick oats because thats what I keep on hand)
1 C chocolate chips (can easily sub white chocolate or butterscotch chips here)

Mix the wet ingredients together then add in the dry and mix well. Form gooey mixture into small balls and store covered in the refrigerator until ready to eat (cool at least an hour), no cooking required. Depending on the size balls you make will depend on how many you get. This recipe is intended to be a "snack" of sorts, but I will also grab a small bag of them to eat in the car when I don't have time to sit down and eat breakfast. Best if eaten within a week, if they actually last that long.
