Cucumbers are cheap right now, even if your garden is not overflowig with them. They make a great tasting and healthy side dish to almost anything coming off of the grill. Of course there are many variations of this recipe, here is one to get you started -
5 cucumbers, peeled and thinly sliced
1/2 onion thinnly siced and pulled apart into individual rings
1 1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup whipping cream (NOT whipped cream)
4 teaspoon sugar
1 teaspoon Sriracha sauce
1 teaspoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion salt
Combine cucumbers and onions in a large bowl. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours before serving.
