Skip the foil

Did you ever stop and think about why we put foil on top of our casseroles? Basically the reason is simple, we don't want the top to brown too quickly. Why not use an upside down cookie sheet or bar pan instead of foil to put on top of your pan? The pan is easily washable and reuseable, you can even coat it with oil/butter/non-stick spray if necessary. You will still get the same result and now you have just saved yourself the expense of the foil.

One safety note, sometimes the steam will collect on the inside of the pan or foil, and when you remove it, it shifts to become droplets that are uber hot and can drip onto you. You need to be careful when removing any cover off of a hot dish or pan.
