Bananna stuffed french toast

1/2 loaf of whole wheat bread (can sub w/1 Loaf of GF brown rice bread)
10 Eggs
1/2 C Milk (can sub w/rice or soy milk)
1/2 C Apple juice
3 ripe banannas
1 tsp Vanilla
1 tsp Cinnamon

Tear bread into 9X13 pan. In a large bowl, wisk eggs, milk, juice, vanilla, cinnamon & mashed banannas. Pour egg mixture over bread, cover and refrigerate overnight. In AM, remove cover and bake 30 min @ 350 degrees (until golden on top). Let cool a few minutes before serving. Serve with a side of fresh fruit and glass of milk.

I'm a firm believer of using what you have on hand. Made this recipe over the holidays with subbing in egg nog for the milk & juice and then subbing in some "Tupperware English toffee dessert blend" for the vanilla/cinnamon plus added some extra banannas and it was even more yummy!
