Okay, okay, let me start by saying this recipe is only a budget friendly one if you are a couponer and already have most of the ingredients at home or cook a lot from scratch....but for those of you who do....your gonna love it. This recipe is good all on its own, or some say its even better with a dollop of vanilla flavored whipped cream on top, you be the judge.
Bread Pudding:
1 loaf of cinnamon or cinnamon raisin bread (great bread outlet buy and freeze item)
1 stick of butter, melted
1 C raisins or almonds (optional)
8 eggs, beaten
1 can evaporated milk (can sub with whipping cream)
~ 2 cups milk (to total 3 3/4C with evaporated milk mixes in)
1/2 C brown sugar
1 C white sugar
1 Tbsp cinnamon
1 Tbsp vanilla
Spray cake pan with cooking spray. Break bread up into small chunks in the bottom of the pan. Top with raisins or nuts if desired. Drizzle melted butter of bread mixture. In a bowl, mix remaining ingredients and pour over bread mixture. For measuring milk, open can of evaporated milk, and add enough regular milk to it to total 3 3/4 C total. Bake uncovered for ~1 hour, or until bread mixture pulls from sides and springs back when touched. Allow to cool slightly before drizzling with vanilla sauce and serving.
Vanilla Sauce:
1 C white sugar
2 Tbsp corn starch
1 C water
1/4 C butter
2 tsp vanilla
Mix corn starch and sugar together in a sauce pan, then slowly whisk in water. Bring mixture to a boil and stir until sugar has fully dissolved. Add butter and vanilla and remove from heat. Drizzle over bread pudding before serving.
