Buy in bulk and freeze

As springtime approaches we are all anxiously awaiting local produce to be available. In the meantime, don't forget that you can typically get great quality produce at a good price at wholesale clubs. Below is a picture of an item that I buy in bulk at Costco (Sams has something similar). In one evening I dice up the entire bag and freeze them in snack size bag portions so that they are ready to throw right in any recipe I may need them for. I do NOT reccomend freezing them in one large bag unless you freeze them flat on a cookie sheet prior to putting them in the bag. Otherwise, you will have one big pepper popsicle. The bag of peppers cost me about $3, and gives me way more in diced volume than if I were to purchase that same dollar amount in red peppers in a major grocery store chain.
