Frugal Eats - Jam bars

Here is yet another stockpile recipe for you to enjoy. I found a version of it in a Mr Food cookbook last week and thought it was worth digging out of my recipe bin. Best part of this recipe is that its uber cheap and easy to make plus you can make it with red filling in honor of Valentines day as a non-chocolate desert option.

1 box yellow cake mix
2 1/2 C quick cooking oats (uncooked)
3/4 C butter
1 12-14 oz jar of preserves or jam (any flavor, consider using strawberry or raspberry for Valentines Day)

Preheat oven to 375 degrees and spray cake pan with non-stick spray. In a large bowl mix cake mix, oats and butter into a crumble mixture. Put half of crumble mixture (about 3 cups) into the bottom of pan and gently form it into a crust. Next open the jam and spread it evenly over the top of the crust. Top jam with remaining crumble mixture. Bake ~25 minutes uncovered. Allow bars to cool before cuting and eating.
