Buffalo Chicken Salad

As you know, I am a firm beleiver of using what you have on hand to make your money stretch. Well, if you have leftovers from new years entertaining that includes buffalo wings,  here is a great way to use them up.

Take leftover buffalo wings and remove meat from bone. Add  buffalo meat to a mixing bowl. Then add in diced celery, carrot shreads, garden and onions. Mix dressing seperate before adding to salad mix - dressing is equal parts of sour cream and mayo, then add in blue cheese crumbles, a splash of lemon juice, salt/pepper to taste. Serve mixture either on a toasted bun, or on a tortilla wrap. A side of fresh fries go great with this. No need to be gourmet, lets face it, you are probably beat from being up late anyway, so just grab a bag of fries out of the freezer.

If you are looking to "lighten it up" for a New Years resolution, then serve the salad over a bed of lettuce and sub out the sour cream for some plain non-fat yogurt. Of course portion control is key to enjoying the great flavors without blowing your new diet.
