Now that we are deep into winter, fresh fruits and veggies can sometimes be expensive. There is not reason to remove them from your diet, simply switch to canned and frozen. Canned and frozen items can be just as nutritious as fresh, sometimes they are even MORE nutritious. When I go to the store, I look to see what fresh items are on special for the week, grab a few of them, then fill in the "holes" with in the can and freezer isles. Having a mix of fresh and can/frozen makes me feel like I'm not missing anything but keeps me from going over budget.
Here is one of my kids favorite winter meals (to give you an idea of what you can prepare). I use leftover meat (roast, chicken or pork) and shread it. Then add BBQ sauce and serve warm on a bun for a BBQ sandwich. Then I cook some frozen corn on the cob, open a can of fried apples and a can of BBQ beans. Its sorta like a BBQ dinner for the winter and makes a great change of pace durring "casserole season".
