Frugal Eats - Bean Tostadas

This is another inexpensive meatless meal to help stretch your grocery budget! It is an assemble-your-own kind of dish. Recipe and pic was pulled from Good (Cheap) Eats website.  

prepared corn tortillas (warm per package instructions) *
cooked pinto beans *
shredded lettuce
grated cheese
diced tomatoes
sour cream

 Top warm tortillias with pinto beans, lettuce, cheese, tomatoes, and sour cream.

* The pinto beans process will need to be started the evening before you plan to serve this due to soaking and cooking time. Click on link for instructions. Of course you can sub canned beans, but the taste will be altered. If you wish to fry your own shells, simply buy regular corn tortillias and fry them in 375 degree oil until crisp.
