Chicken legs or thighs
potato flakes
melted butter
season salt/pepper/garlic/onion powder to taste
Parmesean cheese
Prep: Take chicken pieces out of package, rinse & pat dry. Mix potato flakes with spices and set aside. Preheat oven to 400 degrees. Cover baking sheet with foil.
Prepare: Take chicken and dip (coating both sides) in melted butter, then in potato flakes. Place pieces on baking sheet (leaving room in between). Bake uncovered in oven till done (about an hour). Turn pieces mid-way through baking time for a even crisper crust. Sprinkle parmesean cheese over chicken when you pull it out of the oven then let set 5-10 minutes before serving so cheese melts slightly.
Serving: Best served with side dishes including a vegetable and rice or pasta dish.
