This is a holiday favorite with my family. We have a few diabetics in the bunch, so we prefer to use the sugar free Jello and cool whip so that they can enjoy it as well. The rest of use simply see it as a way to cut calories out of those holiday meals.
24 oz fat free Cottage cheese
Lg box sugar free Jello (powder)
8oz sugar free Cool Whip
Fruit/Nuts/Coconut to taste (I use 16 oz of canned - diced fruit)
Put cottage cheese in bowl and sprinkle w/jello powder - mix. Fold in Cool whip, mix. Add fruit/Nuts/Coconut to your preferred taste.
Suggested flavors:
Orange jello w/mandarin oranges & pineapple tidbits
Pineapple jello w/pineapple tidbits & coconut flakes
