1lb ground pork
1 box stuffing mix
1 box frozen spinach, thawed and drained
2 Tbsp parmesan cheese
1 egg (lightly beaten)
1 1/3 C water
2 Tbsp melted butter (to brush over top before baking)
Cranberry Sauce to drizzle on top before serving (can sub w/gravy)
Preheat oven to 325 degrees, spray muffin time w/pam.
Cook pork in skillet until no longer pink, drain. In a large bowl combine dry ingredients with sausage. Mix wet ingredients, and them combine them with dry - mix well. Form mix into "balls" and place into muffin tin. Brush tops with melted butter, bake until golden brown ~20-30 min. Serve warm w/cranberry sauce on top. Serve as a side dish or entree.
Combine with a bag of frozen veggies and you can feed a family of 4 for ~$5.
Freezes well, simply thaw in fridge overnight and put into hot oven for ~10 min before serving.
