Mock twice-baked potatos

16 ounces frozen cauliflower
1/3 cup FF sour cream
2 ounces FF cream cheese (cut up)
1 tablespoon butter
1 cup Part skim cheddar cheese, divided
4 slices turkey bacon, fried and crumbled, divided
1 teaspoons sea salt
1/4 teaspoon fresh ground pepper
Garlic powder to taste
Fresh chives to taste

Pre-heat oven to 400 degrees.
Boil or steam cauliflower until tender, Place in a colander to drain and blot with paper towels to absorb as much moisture as possible, pour into bowl.
Use hand mixer. Add sour cream, cream cheese, butter, half the cheese, 3 slices crumbled bacon, salt, pepper & garlic. Mix until contents have the smooth consistency of mashed potatoes.
Grease and 8X8 casserole diish and pour in the cauliflower mixture.
Top with the remaining cheese, crumbled bacon & fresh chives.
Bake uncovered 20 minutes at 400ยบ or until lightly browned.
