Leftovers re-done

Part of stretching a budget is using leftovers from one meal to make another. Since many people had Halloween and football parties yesterday, here are a few meal ides to make with party foods.
  • Queso dip
    • Enchiladas casserole (basic chicken enchaladas with queso as a sauce)
    • Tex mex eggs with cheese (eggs with ham and veggies with queso on top)
    • Cheese fries (bake french fries then pour queso top with sour cream)
    • Baked potato bar (have queso as one of the topping choices)
  • Baked Meatballs
    • Add to spaghetti
    • Make meatball sandwiches (hoagie roll with meatballs, spaghetti sauce and mozzarella cheese)
  • Relish tray veggies
    • Veggie bake (drizzle veggies with EVOO, add spices such as garlic and onion powder and bake, top with fresh grated Parmesan cheese)
    • Make vegetable soup
    • Cauliflower potatoes (boil cauliflower along with potatoes, when done drain, whip with butter & milk as you would normal mashed potatoes)
  • Meat and Cheese tray
    • Tuna melts (Use leftover rolls sliced in half, make tuna salad and top with cheese slices. Bake long enough to melt cheese and toast roll)
    • Leftover meat slices double as lunchmeat for sandwiches
    • Ham & cheese omelets
